Pound the loin slices with the meat mallet and season them with salt and pepper. Finely chop the garlic and parsley and add them to the breadcrumbs previously soaked in the homemade meat broth and squeezed well.

Chop the cooked ham and add it to the bread mixture together with some butter, plenty of grated cheese, salt and pepper. Spread this mixture on the slices of loin, roll them up and tie them with cooking string.

Start threading the chops onto the iron skewers, alternating them with peppers and bread to create croutons. Light the BBQ and heat the grill well before placing the skewers on it. During cooking, remember to moisten the skewers with butter to prevent them from drying out too much; cook well on both sides.
