The preparation of this dish is really quick, fun and everyone will surely like it. During summer barbecues, we are used to eating pork in the form of chops or sausage on skewers, but what happens if we take a pork fillet , cut it into small pieces, grill it and accompany it with lime and a tasty chickpea sauce ? The recipe for pork skewers flavored with lime will tantalize your palate and transport you with body and mind to exotic worlds. Let's find out how to prepare them.

Ingredients for 4 people

  • 600 g of 100% Italian pork fillet
  • 4 limes and leaves to taste
  • 8 bay leaves
  • extra virgin olive oil
  • 200g canned chickpeas
  • 2 cloves of garlic
  • 4 tablespoons sour cream
  • 4 spring onions
  • 1 dried red chili pepper
  • chopped fresh coriander to taste
  • lemon and lime juice
  • cumin to taste
  • Salt and Pepper To Taste


Wash the limes, dry them and divide them into quarters. Brush the meat with lime juice and sprinkle with pepper. Cut the Italian pork fillet into pieces of approximately 4 cm. Take the BBQ sticks, skewer the limes, the pork fillet squares and the bay leaves to create colorful skewers, remembering to alternate the ingredients. Brush everything with olive oil and cook them on the hot grill, about 5 minutes on each side.

For the accompanying sauce, drain the chickpeas from the preserving liquid, rinse them and drain them again. Peel and chop the garlic cloves, taking care to remove the core. Peel the spring onions, wash them and cut them into very fine cubes. Now blend together the chickpeas with the garlic, the spring onions, then season with the olive oil, lime zest, sour cream, chopped chilli pepper and coriander.

Season the sauce with lemon juice, salt, pepper and cumin to create a very spicy and spicy dip. As soon as the skewers are cooked, brush the meat with more lime and serve with the dip, lime zest and a fresh salad. Your palate will give you an explosion of fabulous exotic flavours.
