Beef tartare : the delicious crudité
Appetizer with raw meat tartare
The idea of the appetizer has something attractive and festive about it. The colours, the variety of foods, even before their flavours, whet the palate and make us participate in a choice that almost becomes a game. These dishes have the task of anticipating the meal and stimulating the appetite but also of revealing the style of the lunch itself. This is why the raw meat tartare we are about to present is the perfect appetizer for us at Carne Genuina.
All raw meat eaters know very well that to bring a dish based on raw beef to the table you need to rely on an online butcher's shop that sells very high quality beef online. But which one should you use to make beef tartare? We can use quality cuts of beef, ready-made raw meat , or we can prepare it ourselves cut with a knife using cuts such as beef rump or quality beef steaks .
Buy raw meat online, get a good truffle (or flavored oil) and a good red wine and let's discover a recipe for Piedmontese raw meat also called "Albese raw meat".
Quick recipe for Alba-style raw meat
Raw beef is a preparation that is very present in typical Piedmontese cuisine, especially in Monferrato, and is particularly appreciated when, if it is in season, it is accompanied with truffles or truffle-flavoured oils. It is generally served as an appetizer, or as a single summer dish, and can be prepared with ready-made minced meat or cut with a knife into thin slices, then seasoned with egg, balsamic vinegar or a sauce that can vary, but almost always includes oil and lemon.
Ingredients
- 500 g of raw beef (or rump to be prepared with a knife)
- 80-100 g of white truffle (or truffle flavored oil)
- juice of 1 lemon
- extra virgin olive oil
- salt and pepper
- 1 bunch of wild rocket (optional)
- 1 egg (optional)
Method
If you don't have ground raw beef , take the rump slices and mince the meat several times with a sharp meat knife until very fine. We suggest not using the meat grinder because it would lose its consistency.
Peel and finely chop the garlic, add it to a bowl with the oil , filtered lemon juice, salt and pepper. Mix everything well using a fork and season the meat with the sauce you just created.
Let's move on to the plating: divide the beef into 3-4 portions, place it on serving plates and add the sliced truffle or the truffle-flavoured oil. Garnish to taste with arugula, raw egg yolk or balsamic vinegar , and serve immediately.
This dish, and its aromas, are balanced by full but never too intense flavors; serve a Piedmontese red wine such as Barbera d'Asti or a Pinerolo red. For those who want to risk a particular pairing, serve a red agricultural beer . Thanks to Carne Genuina, the online butcher's shop, you can buy everything you need to prepare this quick and tasty dish without too many worries: raw meat online, spices and condiments , beer and wine .
