Meat sauce

Ragù is a multifaceted dish that lends itself to many preparations: from stuffed vegetables to baked pasta, remaining the undisputed protagonist of many dishes. Here's how to prepare meat sauce !

The ingredients that count

The secret to obtaining a respectable ragù is the choice of minced meat . To obtain a juicy and tasty dish, it is preferable to choose so-called mixed meat, i.e. with a significant percentage of fat. If, however, you need a tasty ragù that benefits your diet, you need to choose lean minced meat.

Italian tradition describes meat ragù as an element capable of combining with many preparations: lasagne, cannelloni, baked pasta, stuffed vegetables and meatballs.

To prepare it you need to steal the tricks of the trade from housewives who once chose to prepare large quantities of ragù and then store it in the refrigerator: ready for any eventuality and need!

But how is it prepared ?

First of all, and to be sure of a noteworthy result, you need to use healthy and genuine ingredients , such as Bovì minced meat. Subsequently you can follow the classic procedure - and perhaps the simplest - which involves slow , long cooking over a low flame .



Start with the sauté : clean and wash the onion, carrot and celery and cut everything into cubes. Pour a drizzle of extra virgin olive oil into a non-stick pan and fry the vegetables.

Add the Bovì minced meat and leave on the heat until cooked, generally 8 or 10 minutes is enough.

Pour everything into a pan with high sides , add the tomato sauce and a glass of water, add a pinch of salt and pepper . Bring the ragù to the boil, cover with a lid, reduce the heat to low and leave on the heat for a couple of hours, taking care to stir from time to time and add some water if it seems too dry.

At the end of cooking, taste and adjust with salt and pepper if necessary.

The meat sauce is ready.

Did you follow your grandmother's advice and prepare an excessive quantity ? No problem, let it cool , and using plastic cups, prepare the portioned meat sauce ready for any eventuality. If necessary, just remove it from the freezer a few hours beforehand, let it defrost and... add it to your preparation.

The meat sauce can be stored in the freezer for a month.
