Baked pulled pork recipe

Ingredients for the marinade
- 2 kg of pork shoulder (you can find it in our Boston Butt for Pulled Pork )
- 1 liter of water at room temperature
- 1 handful of fine salt
- 2 tablespoons Pork RUB - 18
As with classic barbecue cooking, oven-cooked pulled pork also needs to be accompanied by sauce.
Ingredients for the sauce
- 5 tablespoons of mustard
- 1 tablespoon Pork RUB - 18
Method
The preparation of baked pulled pork begins with marinating the pork. In a large, airtight container, immerse the cut of meat, the water, 2 tablespoons of RUB and a handful of fine salt. Leave in the refrigerator to rest for at least 12 hours.
Preheat the oven to 140°C and at the end of the marinade, place the meat in a baking dish covered with aluminum foil, sprinkle the surface with mustard and a spoonful of Pork RUB - 18.
Bake for at least 4 hours, using a meat thermometer to check the cooking of the central part of the pork shoulder.
At the end of cooking, immerse the meat still wrapped in foil in a cooled container in the freezer for at least 15 minutes.
Save the sauce created in the baking dish to add it when plating.
Transfer the pulled pork to a serving plate, shred with the help of a fork, decorate with thinly sliced green cabbage and bring to the table.
