Chicken Kabir

The peasant tradition brings a simple and genuine recipe that begins with the careful choice of ingredients.

To perfectly reflect the story, the recipe requires cooking in a wood-fired oven. However, the absence can be replaced with a barbecue or electric grill: the taste will be less intense but just as tasty.

The ingredients:

  • Chicken Kabir
  • aromatic herbs: rosemary, sage and marjoram
  • 1 pinch of spicy paprika
  • 1 clove of garlic
  • 1 handful of coarse salt
  • 3 tablespoons of extra virgin olive oil


The marinade with paprika is the focal point around which the whole recipe revolves: simple in the process it allows the Kabir chicken to absorb the flavor as best as possible and transform into a tasty dish with a delicious aroma.

Coarsely chop the Kabir chicken taking care to keep the skin on. Pour the oil, chopped aromatic herbs, salt into a large baking dish and cover with cling film.

Let it rest in the refrigerator for a couple of hours, so as to complete absorption and make the meat tastier.

Once the marinade is almost complete, prepare the grill, heat it and when it has reached the maximum temperature, place the chicken pieces.

Cooking will be completed when the skin is toasted. Lower the heat to medium and turn the free-range chicken over and leave on the grill until the meat is well cooked.

Plate, bring to the table and add seasonal vegetables as a side dish.
