Citrus Roast Beef Recipe

The citrus roast manages to tickle all palates and thanks to the bright colors it makes even the little ones in the house happy. Perfect for Sunday and suitable as a recycling bin on Monday, as you know: it's an uphill day for everyone!

Ingredients

  • 750g roast beef
  • 1 organic lemon
  • 1 organic orange
  • 2 glasses of broth
  • 40 g of 00 flour
  • 40 g of butter
  • 10 tablespoons of extra virgin olive oil
  • 1 sprig of rosemary

For the side dish

Choice of green salad, roasted potatoes, mashed potatoes or grilled vegetables.

Preparation

Clean the fruits and remove the lemon and orange zest, keeping only the superficial part and not the bitter white part. Squeeze the juice and keep aside.

Empty the flour into a shallow dish and flour the meat. In the meantime, heat the oil and butter in a non-stick pan over low heat and add the rosemary.

Brown the meat on all sides. Salt and pepper. After 20 minutes add the previously prepared lemon and orange juices.

Cook the meat for another 50 minutes over low heat, adding a little broth from time to time until it is completely absorbed. Chop the lemon and orange zest and add it when there are 10 minutes left until the meat is cooked.

Remove the meat and let it rest, this way the juices can penetrate perfectly and make the meat even more fragrant. Cut the roast into thin slices.

Blend the sauce with the mixer and pour it over the slices of meat. Arrange on a serving plate with the mashed potatoes. Or, if you prefer, with sautéed vegetables or roasted potatoes.
