Oh yes, the beef strips are really imaginative because they really know how to win over everyone thanks to the super speed in making the recipe and because they can be customized with all the vegetables we want. Whether we choose seasonal vegetables, more commercial vegetables that we find all year round, the soul of the pact always remains the same: taste and imagination.
For this recipe for strips of beef with mushrooms we chose champignons, thanks to their light and summery flavour, to differentiate it from the typical traditional Roman dish which involves the use of porcini mushrooms. The recipe requires very few ingredients, small slices of beef walnut, rump or organic slices cut very thinly, without paying attention to the shape (straccetti in fact recalls the irregular shape). The juicy part of this dish is given precisely by the meat which, during cooking, will tend to curl and release the typical bottom sauce. Furthermore, the beef nut is also perfect for creating a tasty carpaccio of raw meat with mushrooms, all you need to do is season it with rocket, sliced champignons, flaked parmesan, oil and salt. Ingredients: strips of meat with vegetables
- 300 g of organic rump strips or slices
- 200 g of Champignon mushrooms
- 100 g of mixed vegetables to taste: carrots, tomatoes and peppers
- 1 clove of garlic
- extra virgin olive oil
- concentrated tomato sauce to taste
- Salt and Pepper To Taste
Beef strips with vegetables
Let's start by taking the champignons and cut them into thick slices, after having washed them carefully and cleaned them from the earth. We take the vegetables we have chosen and cut them into slices the same size as the mushrooms.
We take a pan, add a drizzle of EVOO, the whole clove of garlic peeled and without core and let it brown for just a couple of minutes without letting it brown. Add a little salt and pepper and immediately add the champignon mushrooms.
Let it brown for 5 minutes over medium heat, so that it releases the water, then add the other peeled and cut vegetables as desired. Let's cook the mix of vegetables slowly, if we want to adjust more salt or add a drop of concentrated tomato sauce you will see how tasty it is.
When the vegetables are cooked but still crunchy, add the strips of beef and cook everything for 5-6 minutes. They will be enough given the short cooking time that the strips of beef require. Mix well to mix everything together.
When the strips of meat have become the typical cooked colour, turn them off and serve immediately piping hot with the vegetables as an accompaniment and the sauce which in the meantime will have thickened and will be nice and thick. Don't let it cool please.
Variants and combinations
Beef strips can be combined with many types of mushrooms: porcini and honey mushrooms are perfect for the colder season, shiitakes can be used to recreate a more oriental version. To enjoy strips of beef, we can pair a red wine in the colder seasons and a light beer in the warmer period.
