How to ensure that even the little ones at home choose to eat broth made with vegetables and boiled meat without throwing a tantrum? Once upon a time, cacio e ova balls were prepared with leftover cheeses, today you can choose a specific product, so as to add a refined raw material among the ingredients and offer an extra personalized touch of flavour.
Pallotte cheese and eggs: the regional recipe
The cacio e ova balls can be cooked in many different ways, from the healthiest - with the sauce in the meat broth -, to the most delicious - by frying -, passing through a middle ground that everyone agrees on - with the puree of tomato.
Ingredients: cheese and egg balls
- 600 ml of boiled meat broth
- 50 g of cheese or formaggella
- 50 g of breadcrumbs
- 2 eggs
- 1 sprig of parsley
- ½ clove of garlic
- tomato puree to taste
Method
Chop the garlic and parsley finely and cut the cheese into cubes. Now beat the eggs and combine the two preparations with the cheese and eggs.
Break the breadcrumbs into pieces and moisten them by dipping them into the mixture. The dough should be malleable and soft, if necessary add more breadcrumbs to dry it. Divide the dough and, using your cupped hands, create balls.
After preparing the meat and vegetables, put the meat broth on the heat and, once it has boiled, immerse the cheese and egg balls for about 10 minutes. Drain the balls and, using soup plates, set aside a little filtered meat broth and some balls - if you prefer them in broth -.
For the original version, prepare a pot with ready-made red sauce prepared to your liking and heat the balls slightly to flavor them, also add some parsley and serve the steaming dish. Enjoy your meal!
