From boiled meat to broth for ravioli

Once established and tested an "x" amount of times, you can dare with alternative preparations taking inspiration from world cuisine.

Korean culture is becoming increasingly popular all over the world, thanks to the particular TV series which has games as its central theme, those of the past. Let's leave aside the splatter controversies and all the various and possible consequences that are occurring: let's choose to collect what is super positive the situation can give us: tradition and recipes. Thanks to these two elements we can talk about one of the typical dishes of the area and live in a perfect Korean mood: without a green or red tracksuit, but with a piping hot and amazing dish on the table.

Korean style dumplings recipe
Easy to prepare, curious to bring to the table, in fashion after the Squid Game TV series. Is there anything else needed to encourage preparation? That extra bit of spiciness is thanks to the preparation. The sublime flavor of the filling, however, is the result of the chosen minced pork meat.
Ingredients
- 200 g minced beef
- 200g Chinese cabbage (pak choi)
- 150g pork sausage
- 100g of soya sprouts
- 100g of Chinese mushrooms
- 3 wonton pastry discs
- 2 cloves of garlic
- 2 tablespoons extra virgin olive oil
- 1 tablespoon sesame
- ½ cup of water
- Salt to taste
- a few grains of black pepper
For meat broth our boiling box is perfect, we add:
- 4 spring onions
- 3cm ginger root
- 2.5 liters of beef and chicken broth
- 2 tablespoons soy sauce
Oriental ravioli process
First, toast the sesame seeds in a pan for a few minutes, then, using a mortar, crush the seeds with a pestle. Using a large pan, fry the oil and garlic.
Brown the sausage and beef, add the water, cabbage, mushrooms and bean sprouts. Leave on the heat, topping up from time to time, until the meat is cooked and the vegetables are tender and soft. Cut the spring onions and add to the pan with the sesame seeds, season with salt and pepper. Leave on low heat for a few minutes.
While the filling cooks, let's prepare the ravioli:
- Arrange the won ton discs on a work surface, if they are not already cut, use a glass.
- Brush the edges of the discs with a little water and place half a spoonful of filling in the center.
- Fold the discs forming a crescent and carefully press the edges to create a perfect seal.
Last phase, cooking the ravioli, it's time for the meat broth. Use a large pot, add the broth, soy sauce, 2 thinly sliced spring onions, ginger. Bring to the boil and leave to cook for 15 minutes.
Gently dip the ravioli using a slotted spoon. Leave to cook for 5 minutes - the ravioli will swell. Cut the remaining spring onions and when finished remove from the heat and serve with exotic sauces, the broth on the side and accompanying soy sauce. Bon appetit and… Enjoy!
