Summer chicken recipes are a perfect compromise to create a light and tasty dish and remove the idea of heavy and demanding digestion. Chicken breast is a very light type of white meat and perfect for those who are following a restrictive diet aimed at losing weight or maintaining physical shape.
To bring a curious dish to the table that is something different than the classic grilled steak, you can choose different variations, the desire for the exotic, for the sea, the sun and the wind in your hair makes you prefer a fruit that is now an integral part of many recipes . The avocado, precisely. Chicken, however, lends itself to many variations that offer the addition of curious ingredients or great classics: spices for baked chicken, the oriental touch with curry chicken, the German appeal with baked chicken with beer.

Very easy to make, as good as few other variations, tasty just enough, delicious to the right degree. Many associations can be used to describe meatballs, but the preparation first and then the tasting remain to tell the real plus of the recipe!
Ingredients for chicken meatballs
The choice of top quality ingredients makes the recipe even more genuine and tasty. To make the dish you will need:
- 150 gr. of chicken breast or breast pieces
- 60 gr. of breadcrumbs
- 10 cherry tomatoes
- 1 egg yolk
- 1 glass of white wine
- 1 bunch of iceberg lettuce
- 1 avocado
- sweet and sour sauce to taste
- EVO oil to taste
- poppy seeds, fresh thyme and fine salt to taste
Preparation of the dish
In a bowl, add the minced chicken breast or pieces of chicken breast, the crumbs soaked and squeezed with water, the egg yolk, a little thyme and a handful of fine salt. Mix carefully until a well-blended mixture is created.
Place a non-stick pan on the heat with a drizzle of EVO oil and while it heats, prepare small balls with the previously prepared mixture. Cook for about 10 minutes, blending with the white wine, when the meatballs are golden, remove from the heat and place on absorbent paper to eliminate excess cooking oil.
In a salad bowl, prepare the salad by washing it and cutting it coarsely. Peel the avocado and cut the pulp into slices. Season with a drizzle of oil, fine salt, poppy seeds and mix, being careful not to break the avocado slices.
Serve, creating a welcoming bed with the rich salad and arrange the meatballs in the centre, if necessary add a touch of EVO oil and accompany with the sweet and sour sauce.
Second summer variant
If the desire to mince the chicken meat is zero or almost zero, as we have suggested, the recipe can be made with chicken pieces which, seasoned properly or marinated as per tradition, become a real surplus for the recipe. Chicken lends itself to solving the dilemma of summer main courses by offering a truly vast variety of solutions that range from demanding preparations such as chicken rolls to much simpler ones such as boiled thighs and potatoes in sauce.
