The recipe for cold pasta with vegetables and cheeses

Ingredients

  • 350 g of short pasta (penne, farfalle, fusilli, etc.)
  • 1 courgette, diced
  • 1 red pepper, cut into strips
  • 100g cherry tomatoes, cut in half
  • 100 g of buffalo mozzarella, cut into cubes
  • 50 g of stringy cheese, such as our Cerreto, cut into cubes
  • 50 g of Taleggio DOP, cut into cubes
  • 1 tablespoon fresh basil, chopped
  • 3 tablespoons of extra virgin olive oil
  • Juice of half a lemon
  • Salt and Pepper To Taste

Method

Cook the pasta in plenty of salted water following the instructions on the package, until you reach the desired doneness. Drain it and run it under cold water to stop the cooking and cool it quickly.

In a large bowl, combine the cold pasta, courgettes, red bell pepper, cherry tomatoes, buffalo mozzarella, stringy cheese and Taleggio. Mix gently to distribute the ingredients evenly.

Prepare the vinaigrette by mixing the extra virgin olive oil, lemon juice, fresh basil, salt and pepper. Pour the vinaigrette over the cold pasta and mix again to season all the ingredients.

Cover the bowl with cling film and place in the fridge for at least 30 minutes, so that the flavors blend and intensify.

Before serving, toss the chilled pasta again to evenly distribute the vinaigrette and flavors.
