Cucumber and bresaola rolls recipe

Ingredients for 4 people

  • 2 fresh, long cucumbers (preferably Dutch type)
  • 100 g of bresaola, cut into thin slices
  • 150 g of ricotta or spreadable cheese (e.g. philadelphia)
  • 1 bunch of fresh rocket
  • Aromatic herbs to taste
  • Lemon peel
  • Extra virgin olive oil
  • Salt and Pepper To Taste

Method

To prepare cucumber rolls with bresaola, start by carefully washing the cucumbers and partially peel them, leaving strips of peel for a decorative touch. Cut the cucumbers into thin slices lengthwise with a potato peeler and set aside.

Prepare the dressing by mixing the ricotta or spreadable cheese with a little lemon zest, extra virgin olive oil, salt and pepper. Mix well until you obtain a smooth cream with a balanced flavour. For an extra flavour, you can add chopped chives or herbs to taste.
