Preparing free-range chicken

If you have not purchased a clean and ready-to-cook chicken like the one you can find in our online butcher's shop, follow these steps. If you have a whole chicken ready, move on to the next step.

Start by removing the giblets from the chicken and washing it well under cold running water. Dry it with a clean cloth and cut off the tips of the wings. Next, cut the chicken's spine with a pair of kitchen scissors, then open the breast and flatten it. Finally, spread a generous amount of salt and pepper all over the surface of the chicken and add any spices or herbs of your choice.


Grilled Chicken Marinade

For even more delicious grilled free-range chicken, you can marinate it for a few hours or, if you have time, even overnight. There are many marinade options to choose from, but a simple and tasty marinade includes olive oil, lemon juice, minced garlic, salt, pepper and a few fresh herbs, such as rosemary or lemon thyme. Once the chicken has been marinated, wipe off any excess marinade and leave the chicken at room temperature for about 30 minutes before placing it on the grill.

Cooking chicken on the grill

Light the grill or prepare the charcoal and heat the grill well. Place the chicken on the grill, skin side down, and cook for about 20-30 minutes (depending on the size of the chicken), until the skin is crisp and golden.

To keep it soft and tasty, remember to brush the chicken with the marinating liquid during cooking.

Once the first time has passed, turn the chicken to the other side and cook for another 15-20 minutes or until the internal temperature of the chicken reaches 75°-80°C. To obtain even cooking, you can move the chicken onto the grill which is more or less hot depending on your needs.

Presentation and side dishes for grilled chicken

Once the whole grilled chicken has been cooked to perfection, it is ready to serve.
