When we talk about aperitifs, a series of delicacies come to mind created with more or less refined ingredients which very often have a common denominator: meat. Present in all its forms, from mixed cured meats such as DOC salami , to meatballs, to free-range chicken wings breaded in soy sauce.
In short, when it comes to aperitifs, you don't need to sharpen your wits, you just need to let the bare minimum, your imagination, wander. The other side of the coin is the indecision that allows us to have a thousand ideas and experience the sensation of activating the wrong one. Here are some ideas that are out of the ordinary and at the same time rich in traditional ingredients, to intrigue and amaze guests with small meat-based finger foods!
Aperitif with meat pizzas
Perfect for every season, the meat pizzas arouse the curiosity of adults and children and... in the blink of an eye they will have evaporated from the table. Aperitifs and starters must be good to eat, but above all beautiful to look at, in short, they must make you want to eat them. The meat pizzas manage to meet all the requirements for a respectable aperitif: original and tasty they help the table fill with colour! Ingredients for meat pizzas
- 350 g of minced meat
- 30 g of grated cheese of your choice (perhaps one that melts)
- 2 stale sandwiches
- A few parsley leaves
- ½ clove of garlic
- 1 pinch of chilli pepper
- Salt and black pepper
- 100 g of tomato puree
- 1 tablespoon extra virgin olive oil
- 1 egg
- 30 g of buffalo mozzarella
- Sugar to taste
- Basil leaves to taste
Method for meat pizzas
Start from the base: first finely chop the parsley, chop the garlic, crush the stale bread into crumbs and combine them in a bowl with the minced meat and cheese of your choice. When the mixture is smooth, add the beaten egg, a pinch of salt and black pepper and knead.
Divide the dough into 12 balls, forming meatballs and then crushing them into small, tasty discs. This is the base of your meat pizzas. Meanwhile, heat the oven to 200°C. Place the discs on a sheet of baking paper to prepare them for cooking.
Proceed with the filling: using the mixer, mix the tomato puree, the extra virgin olive oil, the basil and a pinch of sugar - which is used to remove the acidity from the tomato -. Using a soup spoon, decorate the disks, taking care to place the tomato only in the centre. Cut the buffalo mozzarella into cubes and place it in the center of your meat pizzas, add the basil leaf. Bake for 15 minutes and....Bon Appetito! The first delicacy is ready!
Grandma's chicken salad
Taking up family traditions is sometimes complicated. The concept is completely different when it comes to getting into the kitchen, here the imagination combined with the knowledge of our loved ones becomes a mine of excellent ideas: Salad, chicken and grandma. A perfect triad!
Ingredients for Grandma's Chicken Salad
- 1 sliced chicken breast or chicken nuggets
- 1 red pepper
- 1 stick of celery
- 1 cucumber
- Sesame and pine nuts
- 1 carrot
- 1 organic lemon
- Salt, pepper and extra virgin olive oil to taste
Grandma's chicken salad recipe
Fill a saucepan with water and bring to the boil. Add the celery, carrot, chicken and a little pepper. Leave to cook for 20 minutes. Remove from the heat, and after letting the chicken cool, cut it into pieces. Clean and cut the red pepper into not too thin strips. In a pan, heat a little extra virgin olive oil and brown the pepper strips.
Add the chicken, season with salt and leave over medium heat for at least 10 minutes. Once seared, pour the chicken with the peppers into a salad bowl and add the cucumbers, carrots, lemon juice, a drizzle of extra virgin olive oil, a handful of pine nuts and sesame. You need to sit down at the table, take off the apron and voilà! The dish is ready!
Aperitif with morsels of rosemary sausage
Meat-based aperitifs move hand in hand with the desire to add a little color and to move away from the usual things seen and reviewed. Sandwiches, scones, pizzas and....tidbits! Fill the table with rosemary sausage delicacies. Quick to prepare and delicious to eat, these fantastic "tidbits" will disappear in no time!
Ingredients for rosemary sausage meatballs
- 200g of Luganega sausage
- 1 sprig of rosemary
- Extra virgin olive oil to taste
- 1 clove of garlic
- 1 glass of red wine (an excellent Barbera d'Asti)
Procedure for the rosemary sausage delicacies
Break the sausage into bite-sized pieces about 1 centimeter in size. Remove the rosemary leaves from the branch and chop them finely. In a pan, add a drizzle of extra virgin olive oil and sauté the sausage with the rosemary. Leave on medium heat until the sausage pieces are golden.
Add and let the red wine evaporate over high heat. Leave to brown until the liquids are absorbed. Remove from the heat and skewer each morsel with a toothpick...Bring to the table! The rosemary sausage delicacies are ready!
