How is it prepared? To prepare the broth you need water , a piece of meat and... the meat cube. If you want to be sure that all the ingredients are safe, you need to proceed step by step and follow the recipe scrupulously. Homemade meat cubes are easy to prepare and perfect for many preparations .
Homemade meat cube
Useful for preparations, it can be stored in the freezer for up to a few months . After preparing it and letting it cool, you can use the ice molds and pour in the broth to prepare single portions ready for use.
Ingredients
- 300 g of beef (any cut is fine, as long as it is boneless)
- 4 white celery sticks
- 1 onion
- 2 carrots
- 1 clove of garlic
- 10 sprigs of rosemary
- 4 g of red wine
- 170 g of coarse salt
- 100 g of water
Method
Wash the vegetables with plenty of running water: carrots and celery sticks, cut into small pieces, adding the onion. Cut the meat into cubes and add it to a large pot with the vegetables.
Leave on the stove over a moderate heat for 45 minutes , adding a few ladles of water and the wine , taking care to stir from time to time. When the water and wine are reduced, using a mixer , blend everything until you obtain a creamy mixture .
If it seems too liquid, pour the mixture back into the pan and let it dry. Let it cool , transfer the cube into sterilized glass jars if you want to store it in the refrigerator, prefer ice molds if it will be stored in the freezer .
