Oriental ribs
Did you know that, depending on the geographical area, ribs are also called ribs, ribs or chops or cutlets? Choosing to cook a classic dish like ribs at a respectable barbecue can prove to be a double-edged sword. Simple to prepare, oriental pork ribs manage to amaze guests thanks to the spicy notes which, mixed with the sweet and sour flavour, offer an amazing result!

The cooking time varies between 20 and 25 minutes, pay attention to the timer and calculate how to arrange the food on the grill, all that remains is to discover the ingredients:
- rack of pork ribs
- 1 tablespoon Char Siu Rub
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- 2 tablespoons of mustard
- 1 tablespoon honey
- salt and parsley to taste
Tools of the trade:
- brush
- aluminum foil
- blotting paper
- grill
- well sharpened knife
- pliers
- barbecue
Method
Using the knife, cut off the excess fat and dab the slab rib with absorbent paper to eliminate any excess liquid. Brush a little olive oil on all sides and sprinkle with Char Siu Rub. Leave to rest for a few hours.
In the meantime, prepare the grill until you reach a temperature of 110 degrees , arrange the slab and start the first phase of cooking: smoking.
The cooking time is variable and depends on the size of the slab rib, adjust with the colour, when it has reached a dark red colour , it will be ready to move on to the next phase.
Lower the temperature to 90 degrees and wrap the pork ribs in aluminum foil to continue cooking.
In the meantime, mix the oil, salt, mustard, honey and lemon juice until you obtain a smooth emulsion.
Brush the slab and decorate with parsley.
