- 200 g 00 white flour

Method for Japanese meat ravioli
The preparation of this particular dish is laborious and simple at the same time. You need to follow the procedure to obtain a dish that is tasty at the right level and capable of reflecting the flavor of the East that so fascinates the West.
The first step is preparing the filling:
- Wash and clean the spring onion carefully, removing the outermost and bitter leaves. Coarsely chop the chicory and, using a mixer, chop everything creating a homogeneous and not too fine mixture.
- Add the soy sauce, the garlic - after crushing it with a knife -, the egg yolk and the minced meat . Leave to rest in a baking dish.
Now, we need to focus on the preparation of the pastry which must be elastic, thin and resistant:
- Add flour and salt to the mixer, pour in the water slowly and as soon as it starts to mix, continue processing manually. Create a ball and place in a baking dish to let the dough rest for at least half an hour.
- At the end of the wait, form a loaf, roll out the dough and use a pastry cutter to create circles into which to add the filling. Add small balls of filling to each circle of dough and join the outer edges of the pastry. Close the ravioli with light pressure, creating adorable half-moons, thus giving the ravioli its classic shape.
- Heat the oil, combined with a drizzle of water in the wok and cook the ravioli. A light toasting, a light browning and…. The Japanese meat ravioli are almost ready to be brought to the table!
While the ravioli reach perfect browning - it only takes a few minutes - you need to take care of the accompanying sauce: in a small bowl, combine grated ginger and soy sauce. The dish is ready, the nostalgia has subsided, the watering on the other hand... has reached its peak!

The recipe is simple, really easy. Despite this apparent paucity of ingredients it offers enormous potential in terms of yield, pizzaiola meat is gluten-free, light and lactose-free, in short it resolves the intolerances of many without losing points in terms of taste.

- When the puree has firmed up, add a pinch of salt and the spices, raise the heat to medium and add the slices of meat. Cover with a lid, leave to brown for 4 or 5 minutes and remove from the heat.

Light beef rolls
Beef rolls are the key to tricking your mind when you're on a diet. The dish is healthy and light from a nutritional point of view and at the same time manages to be tasty thanks to the imaginative touch and some poor but rich ingredients.

- Beef slices
- 1 stale sandwich
- 2 tablespoons of Parmigiano Reggiano
- 100 ml of white wine
- 1 clove of garlic
- 1 tablespoon extra virgin olive oil
- Marjoram, rosemary, salt and black pepper to taste
Method for light beef rolls
A few quick and easy steps for a dietary, tasty and light dish.
- Pour a little water into a small bowl to soften the bread cut into pieces. Squeeze it and add the Parmigiano Reggiano, the finely chopped spices, the garlic and create a uniform mixture. Spread the slices of beef on a spacious cutting board, place a spoonful of the previously created mixture in the center of each one and roll up. Using toothpicks, close the rolls.
- In a low, wide pan, heat a drizzle of extra virgin olive oil, add the light beef rolls and cook over medium heat, add the white wine, lower the heat and cover with a lid.
- Leave on the heat for 6 or 7 minutes, at the end add a pinch of salt. Prepare the plating and remind diners to pay attention to toothpicks!
