Three recipes of "Grandma's Meatballs "

3 quick meatball recipes

There's no doubt, everyone loves meatballs: for lunch alone, for an aperitif with friends, for dinner with children.

This dish is a guarantee, especially if prepared at home with traditional recipes, quality ingredients and Genuine Online Meat.

#1 The timeless pan-fried meatballs

Preparing meatballs in a pan is very simple, what grandmother's recipe would it be otherwise?

Fried meatballs ingredients

  • 600g of minced beef
  • 200 g of breadcrumbs
  • 150g of pecorino
  • 4 eggs
  • salt, pepper, parsley to taste

Soften the crumb in water, add the rest of the ingredients (we recommend one egg at a time, only 3 might be enough), add salt, pepper, parsley and work the dough with your hands until you obtain the right consistency.

Here's grandma's trick: let it rest for 30 minutes before dividing it into spherical meatballs, twice the size of a walnut. Heat the seed oil and fry the meatballs in the boiling oil until they are golden and crispy. Serve the meatballs on a bed of rocket or lettuce to make a great impression.

#2 Meatballs with sauce, timeless classic

Even grandma calls them Lady and the Tramp meatballs.

She says she cooks them for the children, but we know that she's actually the one who's crazy about them, both the vegetarian meatballs version and the classic version.

Ingredients meatballs with sauce

  • 300g of minced beef (or buffalo ricotta)
  • 100 g of dry bread
  • 30 g of pecorino
  • 30 g of parmesan
  • 1 egg
  • 400 g tomato puree
  • 1 clove of garlic
  • salt, pepper to taste

Finely grate bread, pecorino and parmesan; add these ingredients to the beef (or ricotta) and the egg and mix everything, adding salt and pepper. Form about 12 meatballs and leave them to rest in the fridge for 10 minutes.

In the meantime, heat the oil with the garlic clove and the puree; Gently dip the meatballs into the sauce and do not move them for at least 10 minutes. Then, carefully turn them over and finish cooking, without rushing, like grandma does.

#3 Light baked meatballs

Our open-minded grandmother never stops: to please everyone she invented a recipe for dietary meatballs; being cooked in the oven she calls them light meatballs; then, to compensate for all this lightness, he triples the doses, putting us to the test.

Quick baked meatballs ingredients

  • 350 g of minced beef (or even chicken by mincing the breast, if you prefer)
  • 2 courgettes
  • 2 eggs
  • 50 g of parmesan
  • salt, pepper and mint
  • grated bread to taste

Peel and grate the courgettes, then let them drain for half an hour. Turn on the oven, set to 200°. Now you can drain the courgettes and add them to the other ingredients. Mix, adding the breadcrumbs, until you obtain the ideal consistency, not too dry.

Prepare some balls and roll them in breadcrumbs or yellow flour and place them on a sheet of baking paper. Bake for 20-30 minutes, until golden brown.
