Beef or pork: here are the scallops with lemon

Lemon scallops
Ingredients
- 400 g of beef escalopes or pork loin
- 80 g of butter
- 6 slices of organic lemon
- juice of 1 lemon
- flour to taste
- 1 tablespoon chopped parsley
- extra virgin olive oil to taste
- Salt and Pepper To Taste
Method
Using the meat mallet, flatten the slices of beef or loin, season them with salt and pepper and lightly flour them.
In a large pan, melt the butter and a little olive oil. Insert the scallops and cook them lightly for two minutes on each side. In the meantime, squeeze the juice from a lemon and pour it into the pan. Collect half of the lemon slices and place them in the pan and leave to cook with the lid on for about 4 minutes, stirring occasionally.
As soon as they are cooked, if you like, sprinkle each scallop with a pinch of parsley. Arrange the scallops on a serving plate, pour the bottom of the pan over them and place a fresh lemon slice in the center of each scallop as a garnish.
The lemon scallops are ready and go perfectly with a non-alcoholic lime-based cocktail but a light agricultural beer also has its reason!
