Beef slices with fruit

Ingredients

  • 500 g of rump slices (or sliced ​​rump )
  • 8 peaches in syrup
  • 1 banana
  • 10 strawberries
  • 1 head of lettuce
  • parsley to taste
  • coconut milk
  • extra virgin olive oil
  • 100g of butter
  • Salt and Pepper To Taste

Method

Take the slices of beef, add salt and pepper and brown them in hot oil on both sides for about 3 minutes. In the meantime, heat the peaches in syrup with their syrup in a pan, peel and cut the banana into slices and brown it in a pan with butter and coconut milk for 4 minutes.

Wash and clean the strawberries and cut them into pieces. Wash the lettuce, dry it and place it on a serving plate. On top of the rump slices , place the peaches, banana slices and strawberries together with the sauces. Serve immediately and enjoy this explosion of flavor.

Smoked pork with apple compote

Ingredients

  • 300 g of smoked pork fillet cut into slices
  • 200 ml of apple juice and 250 of diced apple pulp
  • 2 tablespoons lemon juice
  • 1 tablespoon spicy mustard
  • 1 bunch of thyme
  • 1 ½ tablespoons honey
  • 50 g of walnuts
  • 1 mix of salad to taste (we recommend radicchio, chicory and riccia)
  • 4 tablespoons of raspberry vinegar or balsamic vinegar of Modena
  • extra virgin olive oil
  • 10 g of sugar
  • 10 g of butter
  • Salt and Pepper To Taste

Method

Prepare the apple compote: mix the apple and lemon juice, the mustard and the honey, pour the mixture into a pan and bring to the boil. Simmer until the liquid has reduced and evaporated completely. Now add the apple cubes and continue cooking for 2 minutes over low heat. Lightly salt, pepper and add the thyme to taste. Let cool.

Cut the walnut kernels into quarters. Melt the sugar in a pan, add the butter and let it melt. Add the walnuts and flavor with more thyme. salt lightly and let cool. Clean the salads and arrange them on the plate.

Prepare a vinaigrette with vinegar, oil and water and add parsley to taste. Season the salad with this sauce and distribute on plates. Arrange, alternating, the already cooked pork fillet and apple compote, forming small towers. Finally decorate with the walnut brittle and enjoy.

Ingredients for 6 people

  • 600 g of whole beef rump
  • 20/30 dried plums
  • 1 sprig of thyme

Method
