But stew recipes really know how to transform a meal in the coldest period thanks to their versatility, by mixing flavors and aromas you can create many recipes, here are our favourites:

Certified organic meat, authentic taste

The basis of an exceptional stew is high-quality meat, and the choice of organic meat adds a touch of authenticity to the dish. Organic meat comes from sustainably raised animals, free from antibiotics and pesticides.

This not only translates into a positive impact on the environment, but is also reflected in the more pronounced and genuine flavor of the meat.

The ingredients that will make your stew shine

The key to a successful stew is the balance of ingredients. Cut the beef into even pieces, ensuring even cooking. Select high-quality mushrooms, such as porcini or button mushrooms, to add a depth of flavor and mouth-filling texture. Add aromatics like garlic, rosemary and thyme to further elevate the complexity of the dish.

Freshness versus convenience: the choice of mushrooms

When preparing a stew with mushrooms, the choice between fresh and frozen mushrooms can be influenced by various factors.

Fresh mushrooms bring with them authenticity of flavor and a more robust texture, while frozen ones offer convenience and are often available year-round.

Fresh mushrooms, such as porcini mushrooms or freshly picked mushrooms, add a touch of refinement to the dish, giving a unique depth of flavour.

Beef Stew with Frozen Mushrooms : However, if seasonal availability or speed of preparation is a priority, frozen mushrooms maintain good quality and reduce preparation time without significantly compromising taste.

Regardless of your choice, the stew will be delicious and rich in flavor, proving that the quality of your cooking depends not only on the ingredients, but also on the passion you put into preparing each dish.

The recipe for beef stew with mushrooms

  • 500g organic beef pieces or stew (for a light taste you can use chicken pieces)
  • 200g of porcini or champignon mushrooms, cleaned and sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons of flour
  • 200ml of meat broth
  • 200ml of red wine
  • 2 tablespoons of tomato paste
  • 3 sprigs of rosemary and thyme
  • Olive oil, salt and pepper to taste

If you want to create with fresh mushrooms, start by cleaning the mushrooms with a brush or kitchen cloth, be careful not to clean them with water because they would absorb too much liquid which they would release during cooking.

If you want to create the recipe with frozen porcini mushrooms or champignons, take them out at the right time so as not to let them thaw and soak excessively.

In a large saucepan, sauté the onion and garlic in olive oil until golden brown.

Add the meat, cut into cubes, and brown on all sides. Here we have two ways: you can flour the meat before browning it or you can sprinkle the sauce with flour to form a light roux.

As soon as the meat is cooked, pour in the red wine to deglaze, then add the tomato paste, mushrooms, meat broth, rosemary and thyme.

Leave to simmer for at least 2 hours or until the meat is tender and the sauce has reduced.

Add salt and pepper to your taste with a side dish of your choice or a good piece of toasted bread to make the slipper.
