The recipe for beef stew with mushrooms

Ingredients:

  • 500g organic beef pieces or stew (for a light taste you can use chicken pieces)
  • 200g of porcini or champignon mushrooms, cleaned and sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons of flour
  • 200ml of meat broth
  • 200ml of red wine
  • 2 tablespoons of tomato paste
  • 3 sprigs of rosemary and thyme
  • Olive oil, salt and pepper to taste

Method

If you want to create with fresh mushrooms, start by cleaning the mushrooms with a brush or kitchen cloth, be careful not to clean them with water because they would absorb too much liquid which they would release during cooking.

If you want to create the recipe with frozen porcini mushrooms or champignons, take them out at the right time so as not to let them thaw and soak excessively.

In a large saucepan, sauté the onion and garlic in olive oil until golden brown.

Add the meat, cut into cubes, and brown on all sides. Here we have two ways: you can flour the meat before browning it or you can sprinkle the sauce with flour to form a light roux.

As soon as the meat is cooked, pour in the red wine to deglaze, then add the tomato paste, mushrooms, meat broth, rosemary and thyme.

Leave to simmer for at least 2 hours or until the meat is tender and the sauce has reduced.

Add salt and pepper to your taste with a side dish of your choice or a good piece of toasted bread to make the slipper.
