Chicken and mushroom soup ingredients
- 200 grams of organic chicken breast, cut into cubes
- 300 grams of pumpkin
- 250 grams of mixed mushrooms
- 1 liter chicken broth (whole chicken, chicken thighs)
- 1 onion, finely chopped
- 2 cloves garlic, minced
- nutmeg, salt and pepper to taste
- chopped fresh parsley, to garnish
- extra virgin olive oil
Autumn chicken, pumpkin and mushroom soup procedure
In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic and fry until soft and translucent.
Add the organic chicken cubes and cook until lightly browned on each side.
Add the diced pumpkin and mix well with the chicken and onion. Leave to cook for a few minutes, until the pumpkin begins to soften slightly.
Add the sliced mushrooms to the pan and cook them together with the other ingredients for about 5-7 minutes, until they release their aroma.
Pour the organic chicken broth into the pot and bring to a boil. Then reduce the heat and let the soup simmer for about 20-25 minutes, making sure the squash and chicken are fully cooked.
Add nutmeg, salt and pepper to taste and mix to blend the flavours.
Once ready, serve the soup with a sprinkling of fresh chopped parsley as a garnish. For a festive presentation idea, you can also hollow out the pumpkin and bring it to the table with the soup inside.
