Ingredients:

  • 1 whole beef tongue (approximately 1.2 kg)
  • 2 Tropea onions
  • 1 lemon
  • Fresh parsley
  • Extra virgin olive oil

Method

Warning : before cooking the beef tongue with the various recipes, it must be carefully cleaned: place it on a cutting board and remove the glands and fat using a knife, then place it in a bowl and rinse it under running water. Once you have completed this first step, transfer it to a bowl and leave it to soak in cold water for about 2 hours. During this time, you must take care to change the water several times as soon as it becomes cloudy.

Now we can cook it. The solution to obtain an excellent result and drastically reduce times is the pressure cooker. This way it will take about two hours or an hour and a half.

Once cooked, cut the Tropea onions into thin slices and place them in cold water with lemon juice for 10 minutes. Meanwhile, slice the beef tongue into thin slices. Drain the onions and mix them with your tongue in a bowl.

Add chopped fresh parsley and season with extra virgin olive oil, salt and pepper to taste. Mix all the ingredients well so that they are evenly distributed.
