The Magatello is a lean and compact cut, without ribs.

Vitello tonnato is a recipe of Piedmontese origins, but known throughout Italy. 100% Italian beef topside is the perfect cut of meat to prepare this typical dish, originally called vitel tonnè or vitel tonnà, in its region of origin.
However, the Magatello is a cut that is also suitable for the preparation of a lean roast or, cut into slices, is perfect for the preparation of pizzaiola meat or scallops. Cut into very thin slices, it can be used for a very fresh magatello carpaccio .
