Description
Bigia is a soft , raw cheese with a flowery rind produced with pasteurized Italian cow's milk, salt and rennet. The paste appears slightly "chalky" in the heart with a very accentuated but compact proteolysis under the rind.
The typically greyish rind (hence the name bigia) with light reddish hues has a marked presence of mold which is essential for the maturing of the cheese.
The flavor is very characteristic, persistent and with an undergrowth aftertaste .
