Almond and bamboo chicken recipe
Here are the ingredients needed to prepare the almond and bamboo chicken:
- 500g organic chicken breast, diced into strips
- 150 g of shelled almonds
- 200 g of pre-cooked bamboo (the one you find in jars, if you use fresh bamboo,
- remember to blanch it 10 minutes before using it in the recipe)
- 2 tablespoons light soy sauce
- 2 tablespoons dark soy sauce (or teriyaki)
- 4 tablespoons of sesame oil (or seed oil)
- 1 tablespoon Chinese wine (or white wine or mirin)
- 1 tablespoon cornstarch
- 1 glass of water or chicken broth
- Ginger powder to taste
- Salt and pepper to taste
- Fresh spring onion for garnish
- Basmati rice and sesame seeds to accompany
Almond and bamboo chicken preparation
In a non-stick pan, lightly toast the shelled almonds over medium heat, in plenty of sesame seed or seed oil, until golden brown, being careful not to burn them.
Once ready, set them aside and keep the oil.
In a bowl, marinate the chicken cubes with the light soy sauce, dark soy sauce, cornstarch and sesame oil for at least 10 minutes.
In a large skillet or wok, heat the oil in which we toasted the almonds and add the marinated chicken and cook until well browned on all sides.
Add the bamboo shoots to the pan and cook for a few minutes until tender but still crunchy.
Also add the almonds that we toasted previously.
At this point, add the broth, a spoonful of sesame oil, another half spoonful of corn starch and the Chinese wine (or mirin).
Leave to cook, season with salt and pepper to taste, and add powdered ginger if desired.
Once a nice cream has formed, turn off the heat and serve the almond and bamboo chicken hot, garnished with some toasted almonds, some fresh spring onion and accompanied with basmati rice and sesame seeds.
