Peppers, with their shape vaguely reminiscent of pumpkins, lend themselves perfectly to being carved and transformed into delicious and scary stuffed pumpkins.

Recipe for baked stuffed peppers with pumpkin, sausage, rice and taleggio cheese

Baked stuffed peppers with pumpkin, rice and taleggio represent a perfect combination of autumnal flavors and delicious textures.

The sweetness of the pumpkin combines with the creaminess of the taleggio and the delicate consistency of the rice, creating an enveloping and irresistible filling, which blends harmoniously with the sweetness of the baked peppers.

Ingredients stuffed pumpkin-shaped peppers (for 4 people)

  • 4 medium sized peppers
  • 200g of pumpkin cut into cubes
  • 150 g of salamella (if you like to add it)
  • 150 g of rice
  • 100 g of taleggio cheese cut into cubes
  • Fresh aromatic herbs to taste (such as thyme or rosemary)
  • Salt and Pepper To Taste
  • Extra virgin olive oil to taste

Baked peppers with pumpkin and taleggio procedure

Let's start with the funniest thing. We cut the top of the peppers and remove the seeds and internal filaments. Now, if we want to create them with a Halloween theme, we can also carve the little eyes in the shape of triangles and the mouth.

In the meantime, boil the rice in boiling salted water until it is al dente, then drain it and let it cool slightly.

Let's prepare the filling. In a pan, lightly fry the pumpkin with the aromatic herbs of your choice (thyme or rosemary) and a drizzle of olive oil. Add, if you want, a few pieces of salamella.

We take a bowl, combine the pumpkin with the rice and add the taleggio cheese cut into cubes, mixing gently until a homogeneous mixture is obtained.

We fill the peppers with the pumpkin, rice and taleggio mixture, we do not reach the edge, then we close the upper part of the peppers.

Place the peppers on a lightly oiled baking tray and cook them in a preheated oven at 180°C for around 25-30 minutes, or until the peppers are soft and the filling is golden on the surface.

Let's bake and serve for a super themed party! During cooking, it may happen that a little bit of filling comes out of the holes, but it will make your pepper pumpkin even more scary!
