The Girello or Fusello di shoulder is a tasty cut, which derives from the shoulder muscles of the bovine. It is an economical cut of meat with the best quality-price ratio because it is considered to belong to a less valuable part than others, but it is a versatile and fundamental product for many recipes.
In Italy it is known by various names: shoulder, rollino, shoulder roll, zogia and soppello and you can find it available in every Italian butcher's shop.
