Potato timbale recipe with seasoned sausage

Potato timbale, potato pie or soufflé... a thousand ways to call it and prepare it but a unique and unforgettable taste. Potato pies are perfect for any occasion, whether you add cooked ham, salami paste, peas, sausage or spicy salami, they manage to conquer every palate for the harmony of flavors they release in the mouth.

We are often used to eating timbales prepared and cooked in the classic rectangular oven casserole, but if we want to have fun and dare with more refined cuisine, we can create very nice single portions. Whether they are mini or single, the portions will certainly not disappoint in taste and consistency: yes, because the version we propose is truly a single dish. The classic version of the potato pie is found with sausage which, mixed well with the potatoes and eggs, gives a mouth-watering taste and aroma.

But, here we want to dare and propose a truly gourmet version: potato pie with provolone and seasoned Cinta Senese pork sausage or salami paste. A very simple dish - not in taste - very easy to prepare at home which has nothing to envy of great gourmet restaurants. Let's see how to prepare it.

Ingredients of potato timbale with sausage

  • 500 g of new potatoes
  • 200 g of provolone
  • 120 g of cured Cinta Senese sausage or salami paste
  • 30 g of grated 24 month Parmigiano Reggiano
  • 1 large egg
  • 1 bunch parsley
  • butter to taste
  • grated bread to taste
  • Salt and Pepper To Taste

Potato pie with seasoned sausage

We see two versions that are different in form but not in substance. Let's start by boiling the potatoes in plenty of salted water for at least 40 minutes. Once cooked, drain, peel and mash the potatoes while they are still hot but not boiling, collecting the mashed potatoes in a bowl.

Add the beaten egg, half 24 month Parmigiano Reggiano, salt, pepper and chopped parsley to the mixture. Now mix everything with a spoon, making it homogeneous and well smoothed.

In the case of a single portion, we take a disposable aluminum bowl - or the muffin mold - butter it and place a small part of potatoes on the bottom, put a few cubes of salami, salami paste or seasoned Cinta Senese sausage, a few cubes of provolone and cover with another layer of potatoes. Sprinkle with the remaining Parmesan, some flakes of butter and bake at 200° for about 30 minutes.

Instead, if we want to create a nice pan, we take a porcelain - or glass - mold with a minimum diameter of 20 cm, butter it and sprinkle the bottom with breadcrumbs. We repeat the same procedure as for the single portion: potato mixture, layer of diced smoked sausage, layer of diced provolone and further layer of potatoes and Parmesan. Bake in the same way: at 200° for about 30 minutes.

Remove from the oven and serve the single portion or a slice of timbale while still hot and enjoy your meal.
