Pumpkin and sausage risotto recipe with the Thermomix


  • 320 g risotto rice (Carnaroli)
  • 500 g pumpkin or red squash, cut into cubes
  • 300 g Luganega sausage, peeled
  • 1 onion or shallot, finely chopped
  • Vegetable broth to taste
  • Extra virgin olive oil to taste
  • Salt and Pepper To Taste
  • Grated Parmigiano Reggiano


We start by chopping the onion with the Thermomix (speed 5 for 3 seconds), add the EVO oil and brown for 3 minutes at approx. 120°C. at speed 1.

Now cook the pumpkin in the Thermomix basket, season with the chopped mixture at 100°C for about 2-3 minutes, speed 1 (until it becomes tender).

Now add the crumbled sausage and cook for 5 minutes at 100°C on speed 1.

Now add the rice to the Thermomix, add the broth and water, cook for 15-20 minutes at 100° C on speed 1.

If it gets too dry, gradually add the broth through the hole in the Thermomix lid. Continue until the rice is cooked al dente and has absorbed all the flavors.

Season with salt and pepper, complete with a generous sprinkling of grated Parmigiano Reggiano and mix delicately.
