  • 200 g of cooked and mashed pumpkin
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1/4 cup grated cheese (parmesan or pecorino)
  • 2 cloves of garlic finely chopped
  • 1 teaspoon of salt
  • 1/2 teaspoon black pepper
  • Chopped fresh parsley
  • Olive oil for cooking

Meat and pumpkin meatballs procedure

First, let's cook the pumpkin to make it soft for the base of the meatballs. You can blanch it for a few minutes, fry it in chunks in a pan or boil it in the microwave for 8-10 minutes at maximum power (covered with microwave film or in a suitable container).

In a large bowl, combine the ground beef, mashed squash, egg, breadcrumbs, grated cheese, minced garlic, salt, black pepper and fresh parsley. Make sure to combine all the ingredients evenly.

With wet hands, form small round meatballs out of the dough. You can adjust the size to your liking, but try to keep them all the same size to ensure even cooking.

In a nonstick skillet, heat some olive oil over medium-high heat. Gently place the meatballs in the hot pan.
