Chicken preparation procedure with Thermomix

Let's start with a super quick trick for flouring chicken. Take a food storage bag in the refrigerator and add the flour, salt, pepper and start shaking. Take the morsels or slices of chicken breast, place them in the bag and shake to flour each morsel well.

Let's now move on to the Thermomix. Place the grated lemon zest, medium shallot and 1 clove of garlic in the bowl: 6 seconds, speed 8. Then add the EVO oil: 4 minutes, 100°, speed 1.

We then insert the butterfly into the bowl and add the morsels, which we have previously floured, the pepper, the salt, chives and chilli powder if you like: 20 minutes, 100 degrees, anti-clockwise, soft speed.

After the first 2 minutes, add the wine and lemon juice, incorporating them through the hole in the lid with the blades moving carefully. Now, when there are about 5 minutes left, we check the cooking from the lid and, if it seems too mushy, add a little water.

As soon as it is ready, serve with the accompanying cream and a slice of lemon.
