On this special occasion, we want to offer you a delicious summer recipe to satisfy your desire for lasagna, but without having to turn on the stove for hours.

The summer version of lasagna

During the summer, with high temperatures, the desire for lighter dishes becomes inevitable. The summer version of lasagna adapts perfectly to this need, offering faster preparation and without the need to cook the ragù for hours.

Courgette, ham and cheese lasagna is a light and flavorful version of this classic Italian dish, perfect for hot days when traditional ragù seems too heavy to eat and prepare.

In this variant, we replace the ragù with layers of fresh courgettes and cooked ham, enriched with a creamy cheese sauce. The result is a tasty and refreshing lasagna, perfect for outdoor lunches and dinners.

The recipe for lasagna with courgettes and ham

The recipe we propose has two possible variations: one with the classic puff pastry and an even lighter one; if we remove the pasta and alternate the courgettes as if they were puff pastry the result will be super creamy and tasty. In this case, when alternating the layers you will only have to use the courgettes as a divider.

Ingredients

  • 250 g of dry lasagne (already cooked, if possible)
  • 2 medium courgettes, cut into thin slices lengthwise
  • 200 g of cooked ham, cut into strips
  • 200 g of sliced ​​stringy cheese (emmental or our Cerreto)
  • 200 ml of béchamel (homemade or purchased ready)
  • 50 g of grated parmesan
  • Extra virgin olive oil
  • Salt and Pepper To Taste

Method

Start by preparing the courgettes: cut them into thin slices along the long side, then cook them in a pan with a drizzle of extra virgin olive oil, salt and pepper. Brown them for a few minutes until they are soft but still slightly crunchy.

If you want to prepare the version without pasta, you can keep them raw. Now prepare a baking dish lightly greased with oil. Pour a thin layer of béchamel on the bottom.

Arrange a layer of dry lasagne on the béchamel sauce, then cover them with a layer of courgettes, one of ham and one of sliced ​​stringy cheese.

Continue creating layers alternating lasagna, courgettes, ham, and cheese until you run out of ingredients. The last layer must be of béchamel and stringy cheese.

Sprinkle the surface with grated parmesan and a drizzle of extra virgin olive oil.

Cook the lasagna in the pre-heated oven at 180°C for approximately 25-30 minutes, or until the surface is golden and crispy.

Let the lasagna rest for a few minutes before serving, so the flavors will blend perfectly.
