And here comes the classic and traditional question: “But where do you get these ideas? You have a superlative imagination! Wow! Top!" and all the rest. It's nice to receive flattery but, to always propose something new without falling into the obvious and to be able to keep the belief of bringing healthy and genuine products to the table intact, you need to refine your technique. As? Simple. Take two typical ingredients of Italian cuisine, combine them and find a balance in terms of flavor. That's it: here's an idea!

Chocolates Day: they invent them all!

Chocolates Day is celebrated on November 29, 2021: the solution of adding it to the pan allows you to enjoy top quality chocolate without sinking into guilt. The medal of discovery is to be attributed to the Spaniards who discovered the chocolate recipe during one of the many explorations: from the Maya of Mesoamerica. Various legends revolve around the origins of the use of chocolate in Europe, one of the most curious is: in 1579 the English, during one of the many battles, attacked a Spanish ship with a real treasure inside.

Initially the cocoa beans were exchanged for sheep droppings. The Spaniards tried to put out the fire, but the closer they got to the half-burnt boat, they smelled a delicious and inviting scent in the air. A chef's flair lit a light bulb in his mind and, knowing the precious contents of the vessel, he chose to add a pinch of sugar to the half-charred treasure. Result? Melted chocolate began to invade all Spanish inns. In short, it was the beginning of the end for dietitians and others!

Pork fillet and chocolate sauce

Respecting a controlled diet without - too many - excesses is complicated, especially when delicious and very inviting international days appear. Here's how to propose a delicious dish without - too many - feelings of guilt!

Ingredients for chocolate pork fillet

For the sauce:

  • 1 small tub of blackberries
  • 1 teaspoon of brown sugar
  • ½ bar of dark chocolate
  • ½ organic lemon with edible peel

Method for chocolate pork fillet

Remove the pork from the refrigerator so you can cook it at room temperature. Fill a pan with water and place on the heat until it reaches the boil. Add the previously peeled and coarsely chopped potato. Leave to cook for 5 minutes, drain and leave to cool.

In the meantime, finely chop the red onion. Prepare the meat for cooking: use a brush to spread the oil on both sides, add salt and pepper. Turn the oven on to 180°C and, when the temperature is reached, place the pan with the pork fillet, onions and potatoes in the oven. Leave to cook for 30 minutes - the potatoes, once they are golden brown, will indicate when the meat is ready.

You need to dedicate yourself to the chocolate sauce! In a saucepan, caramelize the sugar with the blackberries and the juice of ½ organic lemon, paying attention to the flame. Continue stirring for at least 5 minutes, without worrying if the blackberries break. Add the dark chocolate and let it melt into the mixture.

Remove from the heat and return the focus to the pork tenderloin. If it is cooked, remove from the oven and start preparing the plating: prepare a soft chocolate base on which to place the pork fillet cut into 1 cm slices. Decorate with potatoes, mixed salad and...Bon Appetito!
