Courgette flowers
Late summer, lush vegetable garden, obligatory frying. But what can we choose?
A complete dish, rich in vegetables and meat at the same time is undoubtedly represented by courgette flowers stuffed with meat . Good, or rather not, very good in many sauces.
The versions are countless. To make this dish exceptional, simply follow the recipe to the letter and prefer top quality ingredients.
The recipe requires the preparation of 20 pieces. This dish is ideal for serving on a Sunday lunch when the family is together. The preparation time is around 35 minutes , the right time to offer some appetizers as an aperitif and start the dance with the main course!
The ingredients
- 200 g of courgette flowers
- 250g of selected Bovì ground meat
- 100g of scamorza
- aromatic herbs, salt and black pepper to taste
For the batter
- 160 g of flour
- 220g of light beer
- 1 egg yolk
- salt and black pepper to taste
For frying
Necessary
- 3 basins
- 1 grater
- 1 whisk
- 1 x Immersion Kitchen Thermometer
- 1 pliers
- 1 frying pan
- blotting paper
- 1 tray
The procedure
With a brush , remove any soil residue from the courgette flowers. Then soak them in a bowl with cold water .
In the meantime, in another bowl , flavor the minced meat with the herbs, a pinch of salt and black pepper. Grate the scamorza and add it to the mixture. Mix the mixture with your hands until you obtain a homogeneous mixture.
Take the courgette flowers, dry them with a kitchen towel and cut the stem , the external pistils and the internal bud .
Creating small balls with the Bovì minced meat mixture, stuff the inside of the courgette flowers and twist the tips to create a sort of bag. This way you will avoid the meat from escaping during the cooking phase.
Place a pan on the heat to start bringing the frying oil to the ideal temperature of 170 degrees .
Now dedicate your time to preparing the batter . Sift the flour, salt and pepper into a bowl and pour in the beer, continuing to mix with the help of a whisk. Incorporate the egg yolk and continue to mix slowly, making a wide radius. You should obtain a smooth batter without lumps .
When the oil is ready , dip the courgette flowers filled with Bovì meat in the batter and transfer them to the pan, using tongs, turn them upside down in the boiling oil . When they are golden , drain them and place them on a tray lined with absorbent paper .
Continue until the last courgette flower is fried, avoid tasting it, the risk of eating them all is lurking! Dab the excess oil , add a pinch of salt and bring to the table!
