The ingredients
- 200g of courgette flowers
- 250g of selected minced beef
- 100g scamorza or buffalo ricotta
- aromatic herbs, salt and black pepper to taste
- EVO oil
For the frying batter
- 160 g of flour
- 220 gr of light beer
- 1 egg yolk
- salt and black pepper to taste

- 3 basins
- 1 grater
- 1 whisk
- 1 immersion cooking thermometer
- 1 pliers
- 1 frying pan
- blotting paper
- 1 tray
The procedure for courgette flowers with meat and ricotta
Using a brush, remove any remaining soil from the courgette flowers. Then soak them in a bowl of cold water .
Meanwhile, in another bowl , season the minced meat with the herbs, a pinch of salt and black pepper. Grate the scamorza and add it to the mixture or add the buffalo ricotta. Mix the mixture with your hands until you have a smooth dough.
Take the courgette flowers, dry them with a kitchen towel and cut the stem , the external pistils and the internal bud .
Creating small balls with the minced meat mixture, stuff the inside of the zucchini flowers and twist the tips to create a sort of bag. This will prevent the meat from coming out during the cooking phase.
Place a pan on the heat and start bringing the frying oil to the ideal temperature of 170 degrees .
Now dedicate yourself to preparing the batter . In a bowl, sift the flour, salt and pepper, pour in the beer slowly , continuing to mix with the help of a whisk. Incorporate the egg yolk , continue to mix slowly, making a wide radius. You should obtain a smooth batter without lumps .
When the oil is ready , dip the courgette flowers stuffed with Bovì meat in the batter and transfer them to the pan, using tongs turn them upside down in the boiling oil . When they are golden , drain them and place them on a tray lined with absorbent paper .
