Meat and yogurt sauces: the winning combination

Typical Italian cuisine cannot ignore meat. Our traditional recipes are even more delicious and tasty when the ingredients they contain, in addition to receiving a notable dose of aromas and flavours, are also delicately seasoned with excellent sauces that combine perfectly.

Your menu can be enriched with interesting gastronomic proposals if you know how to amaze your diners with new combinations of top quality ingredients that come from short, family-run supply chains like ours. Discover our new Greek-style yogurt product: strained yogurt

Sauces based on Greek yogurt or Greek-style yogurt can be prepared in many variations with other foods and which we can use to accompany meat or other products. Let's see some sauces that will give a touch of freshness to meat dishes.

The most famous: the original tzatziki sauce recipe

Tzatziki sauce is a sauce of Greek origin that accompanies roast meat or boiled meat. It is prepared with Greek yogurt, garlic and cucumber.

Tzatziki sauce can be eaten as a fresh and crunchy appetizer. But if we decide to use it to flavor our roast or boiled meat, then it is better to put the sauce in the refrigerator until it has completely hardened.

The recipe for tzatziki sauce is very simple: it is an emulsified cream that can be served as a condiment for meat or fish, but also to accompany vegetable-based foods. This sauce is really tasty and low in calories!

Yogurt sauce ingredients

  • 2 cups Greek yogurt
  • 1 medium cucumber
  • 2 cloves of garlic
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • chopped fresh parsley (to taste)
  • Salt and black pepper to taste

Start by preparing the cucumber: peel it and grate it with a large-holed grater. Place the grated cucumber in a fine mesh strainer and sprinkle with a little salt. Let it drain for at least 10-15 minutes so that the cucumber releases excess water.

In a large bowl, combine Greek yogurt, minced garlic, olive oil, and lemon juice. Mix everything well. Add the grated cucumber and - if you like - the chopped parsley to the yogurt mixture. Stir gently until the ingredients are well combined.

Taste the sauce and adjust salt and pepper to taste. Cover the tzatziki sauce and let it cool in the refrigerator for at least an hour, so that the flavors blend.

Slovenian tzatziki sauce

Slovenian tzatziki sauce is essentially a reinterpretation of traditional Greek tzatziki. A sauce based on cucumbers and Greek yogurt, enriched in this variant by the presence of sweet paprika, but we can replace it with red or spicy chili pepper if we want to give more color to our sauce!

In Slovenia, this spicy sauce is usually served as a side dish, starter or summer first course, in a generously portioned bowl and accompanied by croutons, breadsticks or potatoes.

Mint sauce for meat

A yogurt sauce with a delicate and fresh taste, perfect for accompanying strong-tasting meat dishes: roasts or game meat.

Simple and very quick to prepare. I will serve you Greek yogurt, 100g of fresh mint, a few drops of balsamic vinegar, half a teaspoon of sugar, salt and pepper.

Clean only the mint leaves, wash and dry them. Chop and add them to the Greek yogurt. We dilute the mixture with a few drops of balsamic vinegar, in which you have dissolved the sugar. Season with salt and pepper and serve cold with the meat.

Classic yogurt sauce for meat

If you need an evergreen and super quick yogurt sauce, the classic yogurt sauce is perfect to pair with meat dishes or grilled vegetables. Perfect for enriching your dishes with fresh and aromatic notes. Try pairing it with grilled meats, vegetables or use it as an accompaniment for a light dinner.

To make it, you will need 125 g of Greek yogurt, parsley, chives, thyme and other aromatic herbs to taste, half a lemon and a pinch of salt.

Start by squeezing the lemon and filter it with a fine mesh strainer. Finely chop the aromatic herbs and mix them with the Greek yogurt, adding the lemon juice and salt. Mix everything well and place the sauce in the refrigerator until ready to use it.
