Preparation

Start by preparing the cucumber: peel it and grate it with a large-holed grater. Place the grated cucumber in a fine mesh strainer and sprinkle with a little salt. Let it drain for at least 10-15 minutes so that the cucumber releases excess water.

Slovenian tzatziki sauce

Simple and very quick to prepare. I will serve you Greek yogurt, 100g of fresh mint, a few drops of balsamic vinegar, half a teaspoon of sugar, salt and pepper.

Clean only the mint leaves, wash and dry them. Chop and add them to the Greek yogurt. We dilute the mixture with a few drops of balsamic vinegar, in which you have dissolved the sugar. Season with salt and pepper and serve cold with the meat.

  • 250 g of Greek yogurt or plain yogurt
  • 3 celery hearts finely chopped
  • 3 large, pitted green olives
  • 2 spring onions
  • 1 clove of spicy horseradish (or ginger or chili pepper)
  • 1 tablespoon fresh lemon juice
  • 1 sprig of fennel
  • Salt and white pepper to taste

Spicy yogurt sauce procedure

In a bowl, combine the Greek yogurt, celery, olives and finely chopped spring onions. Mix the ingredients well. Add fresh lemon juice and oil to the yogurt mixture. Mix everything well again until you reach a creamy consistency.
