New online Tighe of green peppers perfect for Salva

“Don't let the farmer know how good Salva is with tighe”

The saying didn't go like this but for lovers of strong flavours, Tighe of sweet and sour green peppers are the perfect novelty. A combination of high quality green peppers and the famous Tighe, these products combine to create an accompaniment for the Salva Cremasco cheese with an unmistakable flavour. They are also perfect for seasoning pasta or adding a sparkling peppery note to meats and fish.

The green peppers that accompany the Salva are called Tighe, a Crema dialect term which translates as "slaps". Thanks to the preservation in vinegar, these peppers maintain their strength, giving a strong taste similar to a resounding slap.

The Salva DOP from Caseificio Taddei recently won the hearts of connoisseurs by winning a prestigious award. This quality of cheese, expertly refined, offers a unique gastronomic experience. From the creamy texture to the complex taste, each bite is a symphony of flavors that reflects the craftsmanship of Caseificio Taddei.

Salva DOP cheese has its roots in a rich and constant supply of milk, obtained through a continuous method of feeding the cows. During spring and summer, the cows feed on fresh grass, while in autumn and winter their diet is enriched with hay and grass from the "marcite", coming from fields irrigated with spring water.

This practice, rooted in the agricultural tradition of Lombardy, has evolved over time, moving from the Bergamo cheesemakers who followed the herds during the winter transhumance to modern production, maturing and sales processes. The combination of ancient techniques and the most current methodologies reflects the constant commitment to combining dairy tradition with innovation.


How to combine Tighe and Salva Cremasco? Here is the recipe:

  • 500g of Salva Cremasco
  • 200g of tighe (Lombardy green peppers preserved in vinegar)
  • Extra virgin olive oil
  • Fresh black pepper, ground

Cut the Salva Cremasco into cubes of about half a centimeter and add the coarsely chopped tighe. Leave to rest in the refrigerator for at least 2/3 hours.

When serving, season the Salva Cremasco with a drizzle of extra virgin olive oil, a sprinkle of fresh black pepper and mix everything delicately.

Simpler than that!
