Two cuts of pork both suitable for the preparation of Pulled Pork , the tasty Yankee recipe for pulled pork , the result of expert and prolonged grilling:
- 2kg whole pork neck
- 3.5 kg whole pork shoulder
The American recipe for Pulled Pork involves the use of the Boston Butt cut (5/6 kg of shoulder and neck), while in Italy many people prefer smaller and more convenient cuts to cook.
The 2kg whole pork neck is a cut of meat rich in fat fiber and when cooked it allows you to obtain a tasty Pulled Pork, rich in flavor and not too moist.
The 3.5 kg whole pork shoulder is a cut with leaner meat, but richer in collagen which ensures the result of a truly juicy pulled pork.
The Pulled Pork recipe requires some preliminary steps and, preferably, a barbecue with a lid that allows indirect cooking; however there are also recipes for baked pulled pork or grilled pulled pork.
We briefly illustrate the fundamental steps of this preparation:
1) Pork Rub : mixture of spices and salt with which it is necessary to massage and cover the pork shoulder.
2) Injections or marinade injections, to increase flavor and juiciness.
3) Slow cooking in the oven or BBQ at 120° for at least 7 hours, remembering to wrap the pork shoulder in aluminum halfway through cooking.
4) Rest : let your pulled pork rest for 30 minutes, before shredding the meat with forks or special pulled pork claws, adding barbecue sauce to taste
5) That's party! Crack open a craft beer and get the party started!
